Buy a book. The SBS 2003 R2 admin companion book has specific chapters about SQL 2005 workgroup, FRSM the quota tool and the SBSized WSUS.... (Full disclosure... I was a reviewer on the book...but it's an excellent resource and has the needed R2 info...
